Allow to record a message for the person in charge of order preparation at the level of the customer, then have it as a note on the picking transfer. This reuses the existing note field on the picking and will make it read-only.

You can prevent users from updating or deleting notes already in use by multiple customers by activating setting Prevent update or delete of notes in use by multiple customers in Inventory > Configuration > Settings.
